ingredients:
  • 2 whole eggplant
  • salt and black pepper
  • coriander, green onion, garlic
preparation:
Start by dicing up your eggplant and sprinkling it generously with salt. Heat a nonstick pan over medium heat. Add 1-2 drops of oil. Rhen you can add the eggplant. Fry the eggplant for about 10-15 minutes. Then add black pepper, chopped coriander, green onion and garlic. Remove eggplant from pan and enjoy!
